(First ensure that your tree is made from Fir, Spruce or Pine and certified organic and not sprayed with any pesticides.) After washing, you want to simmer 100 grams of pine needles in 250 grams of boiling water for 5 minutes. Once strained, stir in 200g of caster sugar to make your syrup.

Then combine all ingredients except for champagne in a shaker and shake as hard as you can. Fine strain into a chilled flute or coupe glass and add 60ml of champagne. Tie a ribbon around the stem et voila.
