Paris Calling

A fresh springtime twist on the iconic London Calling cocktail. A classic gin sour with a lick of dry fino sherry with backbone of citrus. The Paris Calling adds freshness of garden peas to tease out the minerality of Renais.

Ingredients / Measures

/ 30ml/ 1.1oz Renais
/ 20ml/ 0.7oz lemon
/ 20ml/ 0.7oz elderflower syrup
/ 20ml/ 0.7oz fino sherry
/ muddled petit pois
/ Peas to garnish

Step 1

Muddle a table spoon of fresh petit pois or alternatively quickly blanched peas if frozen.

Step 2

Add your ingredients to a cocktail shaker and shake as hard as you can. Strain into a chilled coupe glass and enjoy. Garnish with a pod of petit pois.
