Ingredients / Measures
- / 50ml/1.7oz Renais Gin
- / 1 Egg White
- / 20ml/0.7oz Fresh Lemon Juice
- / 20ml/0.7oz Acacia Honey Syrup
- / 5ml/0.17oz Fino Sherry
Process

Step 1
Add all ingredients into your cocktail shaker, fill to the brim with large chunks of clear, quality ice, shake as hard as you can for 20 seconds.

Step 2
Strain the cocktail through a fine mesh strainer into a chilled coupette glass.
